Dehydrating Grape Tomatoes
We Got a Bunch of Grape Tomatoes
As part of the "Forgetten Harvest" boxes, we had more grape tomatoes than we knew what to do with. We knew if we didn't preserve them somehow, they would go bad and be wasted.
So we decided to dehydrate them!
We cut them in halves and laid them on the sheets to dry.
After about 10 hours in the dehydrator, they began to get wrinkly.
We left them in for another 10 hours and they became completely dry.
All collected together in a mason jar, they smell delicious. Very sweet. We're considering soaking them in olive oil to soften the skins, as they are very chewy.
Now, we have to find uses for our deyhdrated tomatoes. We could incorporate them into bread, or put them in salad dressings.

Sounds like a very smart and assertive idea to use the food. How long do the tomatoes last in mason jars?
Keep them dry and sealed, they last a very long time, years.

I believe the Italians put salt on the halves during drying. They are quite expensive in my country netherlands.

Have you thought of grinding them into powder to use in making sauces, pastes, etc...? That's what I'm planning to do with ours when they're ready to harvest, if we get an abundance. If not, I'll slice them up, dehydrate some and chop some for homemade salsa that'll get frozen until we need some for our tacos or nachos or whatever. 😊

Happy to help, it's nice to get different ideas on what to do with excess veggies. Any we have will get dehydrated and turned into powder to add to other dishes whenever we want an extra punch of flavour/nutrients here. 😊
