Roasting Pumpkin Seeds
My family next door carved a bunch of pumpkins and they very generously saved the seeds for our family. We immediately departed the seeds from the pumpkin guts and put them in salt water. Stored them in the refrigerator until there was a convenient time to roast them.
I rinsed the salt water off the seeds and placed them in a pan with some olive oil and a light sprinkling of fresh sea salt.
The pan was very full and I wondered if I should roast these in two batches. I decided to put them all in the oven, at 350 degrees F.
After checking them frequently, I waited patiently until they were golden brown. I piled them up and salted them again. YUM!
It made for a good snack for the whole family with plenty to spare. Some shell the seeds and only eat the insides, others eat the whole thing for a good source of insoluble fiber. :-)
Health Benefits
I didn't know that pumpkin seeds are very healthy to eat!
They have been used for centuries to treat urinary and bladder infections, kidney stones and parasites. Well only roast and eat melon seeds here, which is nutritious and yummy.

Pumpkin seeds are definitely nutrient dense beyond the vitamin/mineral/macro-nutrient content they also have some potentially useful phytonutrients.
I grew pumpkins for the fall, but got them in the end in the ground a bit too late so we mostly got pumpkin leaves and blossoms. I'll likely grow some in early spring when the soil warms up enough.

It is true that such things are good for our health and nowadays we have grown many vegetables in our garden.
This is what we call Egusi in my country. We grind those pumpkin seeds after removing the dirt on its body then cook it

Our children, my wife and I also love to eat pumpkin seeds. We have several large pumpkins growing in our garden. I remember my grandparents drying pumpkin seeds and storing them on the wood stove during the winter.
