We Gobble These Up Like Candy

Our favorite thing to do with turnips is make Mediterranean pickles, those little crunchy pink things served with Mediterranean food.

After peeling and slicing the turnips, we get all the supplies ready. We found that Kosher salt is essential, instead of sea salt.

We use crushed garlic and peppercorns for flavor along with a red beet for color.

We use waterbath canning for the pickles. The house smells like vinegar!

The beet is on the bottom, it's obvious when they first come out of the bath.

Over time, each jar takes on the distinct pink color.
