MY EXPERIENCE COOKING VEGETABLE WITH TOMATOES

My first cooking experience goes back to the time when I was in my early teens with my mom and its very fun cos i learned so many things. I never knew am very good in cooking vegetable soup with tomatoes. So today i justed learned how to cook Nigeria vegetable soup with tomatoes with the help of my Sister, this is my second experience cooking soup, this was fun. First my Big Sis showed me the necessary the ingredients and how to prepare them she told me The soup is cooked with juices from vegetables..
INGREDIENTS:
1 and 1/2 cups palm oil
1 and 1/2 cups vegetable oil
2 seasoning cubes
5 large sized tomatoes
One medium sized onion
1 teaspoon pepper, you can add more
1 medium sized bunch ugu vegetables (Fluted pumpkin)
3 large sized bunch water leaf
1 cup ground crayfish
No water.
2 kg goat meat (Roasted)
Now that we have seen and know the ingredients, let me tell you how i we prepared it.

First of all i fry the onions and chopped tomatoes in hot oil with pepper and one seasoning cube. I Stir the onion till its translucent. I used frozen tomatoes, so the skin came off easily. You can pour boiling water on tomatoes or freeze to remove skin before chopping.
After i added washed vegetables, then stir it very well, cover and leave for about a minute before adding crayfish and the remaining seasoning cube. Note that you may also fry the crayfish with the onion and tomatoes. Then cook for at least half a minute, then Stir, check for taste and salt before i turned off the heat. Woow so yummy, this was really fun.
You can served food with tuwo, eba (garri), semo, amala, rice, plantain, yam, etc.
